Every Monday is baking day for me, or, treat-making day to be more exact. I try to make something sweet and delicious the hubs and I can snack on all week instead of buying processed desserts and snacks. This week, I stumbled across a recipe for Banana Oat Greek Yogurt Muffins on the lovely Running with Spoons blog and said YES. The only thing I altered about the recipe was not blending the ingredients in a blender–I just used a hand mixer–because I like a chunky oat texture. HOWEVER, we ended up having to eat mine out of the paper cups with a fork because the lack of evenly dispersed oats made them stick! Nevertheless, they were totally delicious–like eating a warm baked mini bowl of banana chocolate chip oatmeal.


Once I was finished baking those, I made a simple dinner of Black Bean Tacos with Avocado Cilantro-Lime Sauce from The Garden Grazer. So fresh, so delicious. I added cheese even though the vegan recipe didn’t call for it.
